  • When to Book

    Depending on the type of service:

    ● Food Tray Pickup and Drop Off 48-72hrs

    ● Food Truck Style - depends on schedule (7-10 days)

    ● Full Service, Fully Attended Buffet - depends on schedule (7-10 days)

    ● Baked Goods - depends on schedule (48-72 hours)

  • Food Minimum Requirements

    ● Food Tray Style: number of trays on case by case basis (request custom quote)

    ● Food Truck Style: 50 people

    ● Full Service: 75 people

  • Wedding Cakes

    We offer Bundt style cakes in various flavors as well as simple frosted cupcakes.

  • Deposits

    ● A 30% deposit of the total estimated invoice is required to reserve your event date. 

    ● This deposit is non-refundable and will be applied toward your final balance.

    ● No dates will be held without a deposit and signed agreement.

  • Menu Changes

    You can make menu changes up to one week prior to your event. We will do our best to accommodate. 

  • Cancellation and Deposit Policy

    To secure your event date and ensure adequate planning and preparation, Blue Smoke Craft Barbecue requires a 30% non-refundable deposit at the time of booking. This deposit confirms your reservation and allows us to allocate staff, resources, and time to your event. 

  • Final Payment

    ● Final guest count and menu selections must be confirmed no later than 21 days prior to your event. 

    ● The remaining balance is due 14 days before the event date unless otherwise agreed upon in writing.

  • Rescheduling

    We understand that sometimes plans change. We allow one complimentary reschedule if the request is made 30 or more days in advance and the new date is available. Rescheduling within 30 days of the event is subject to availability and may incur additional costs.

  • Site Logistics

    ● Our food truck requires 24 feet in length and 8 feet wide clearance

    ● Blue Smoke provides catering trash removal

    ● Blue Smoke provides disposable serviceware and flatware

  • Cancellation Terms

    We understand that plans can change. However, cancellations impact our ability to book other clients and may result in unrecoverable expenses. Therefore, the following policy applies: 

    ● Cancellations made more than 60 days before the event date: No additional payment is due. The 30% deposit remains non-refundable. 

    ● Cancellations made between 30–59 days before the event date: 50% of the total invoice will be due. 

    ● Cancellations made within 29 days of the event date: 100% of the total invoice will be due.
